Q. Rosaline asks: How do I make a simple lemon butter sauce for prawns?

The Practical Kitchen asked Brenda Hyde of Seeds of Knowledge your question, and this is what she came up with:

A. Brenda writes: This is a recipe recommended for shellfish I think would work well:

Drawn Butter

1/3 cup butter
3 tablespoons flour
1/2 tsp. salt.
1/8 tsp. fresh black pepper, ground
1 1/2 cups hot water or fish stock
1 tsp. lemon juice

Melt one half of the butter, add the flour, salt and pepper and stir until smooth. Add the water or stock, stirring constantly, and boil 5 minutes. Add the lemon juice and remaining butter, but by bit.

Makes 1 3/4 cups
