While some may frown upon it, others will welcome it. What am I talking about? Using prepackaged seasoning mixes instead of hand mixing my own. Like every parent, I'm busy, and sometimes you just don't have time to whip up a homemade batch of seasonings.
This particular recipe uses Lawry's Carne Asada seasoning mix to flavor the stew. A perfectly good substitution would be to make your own marinade ahead of time.
Carne Asada Stew
1 1/2 lbs round steak, cut into 1" strips
1 tbsp olive oil
5 large scallions (or 9 small)
2 cloves garlic, chopped or run through a garlic press
1 package Lawry's Carne Asada seasoning mix
1 cup water
1 cup frozen peas
1 cup frozen corn
15 oz. can stewed tomatoes, cut up
salt and pepper to taste
1 cup minute rice
1 cup water
In an electric skillet on 300, or large frying pan over medium-high heat, heat oil. Add scallions and garlic, saute until tender, add beef. Mix 1 cup water and Carne Asada seasoning mix together with a wire whisk or fork, add to mixture in skillet. Bring to a boil, reduce medium.
Prepare minute rice by mixing with 1 cup water and microwaving on high for 5 minutes, covered. Let stand for one minute, fluff with a fork.
Add frozen corn and peas to skillet and cook for five minutes on medium heat (250 in electric skillet). Add canned tomatoes, with juice. Add rice. Salt and pepper to taste. Reduce heat, simmer for 20 minutes, half covered.
Serve with sliced bread and butter.
