Cooking Times for the Perfect Vegetables

these handy cooking tips to prepare the
perfect vegetables to compliment any
meal!
Asparagus:
(whole), 1-inch boiling salted water,
covered, 15-20 minutes. 9 (pieces), 1-inch
boiling salted water, covered, 10-15
minutes; (tips), 1-inch boiling salted
water, covered, 5-10 minutes;
Green
or Wax
Beans:
(whole), 1 inch boiling salted water,
covered, 15-20 minutes; (pieces), 1 inch
boiling salted water, covered, 15-20
minutes; (strips), 1 inch boiling salted
water, covered, 20 minutes;
Lima
Beans:
(whole), 1-inch boiling salted water,
covered, 20-25 minutes;
Beets:
(whole), 1 inch boiling salted water,
covered, 30-40 minutes; (sliced), 1 inch
boiling salted water, covered, 15-20
minutes; (shredded), 1 inch boiling salted
water, covered, 8 minutes;
OR,
Bake covered at 350 degrees F in
1/4-inch water, 45 minutes;
Broccoli:
1 inch boiling salted water, covered, ends
down, and heads out of water
Brussels
Sprouts:
(whole), 1 inch boiling salted water,
covered, 8-10 minutes;
Cabbage:
(wedges), 1 inch boiling salted water,
covered, 20-30 minutes; (shredded), 1/4
inch boiling salted water, covered, 5-8
minutes;
Carrots:
(whole), 1 inch boiling salted water,
covered, 20-30 minutes; (sliced), 1 inch
boiling salted water, covered, 15-25
minutes; (shredded), 1/4 inch boiling
salted water, covered, 5-7 minutes
Cauliflower:
(whole), I inch boiling salted water,
covered, 20-30 minutes; (flowerets), 1
inch boiling salted water, covered 10-15
minutes (add salt later, for white
color);
Corn:
unsalted water to cover, plus 1 teaspoon
sugar (add salt later for tender corn),
5-8 minutes.
Eggplant:
bake at 350 degrees F, uncovered, until
tender, 45-60 minutes
OR
Broil 8- 10 minutes per side, until
tender;
Mushrooms:
Sauté in butter, 8-10 minutes;
OR
Broil 5-8 minutes;
Onions:
(whole), I inch boiling salted water,
covered, 30-35 minutes; (sliced), 1 inch
boiling salted water, covered, 15-20
minutes; OR sauté in butter or oil
8-10 minutes;
Peas:
1-inch boiling salted water, covered, (add
pods and a little sugar for flavor), 10-12
minutes;
Potatoes:
(whole), 1 inch boiling water, covered,
30-35 minutes; (sliced), 1 inch boiling
water, covered, 15-20 minutes;
OR
Bake at 425 degrees F, 45-60
minutes;
OR
Fry in deep fat at 375 degrees F, 5-7
minutes;
Tomatoes:
bake
at 375 degrees F, 25 minutes;
OR
Broil, 5 minutes.
