We have heard of hash browns and corned beef hash, but what exactly is hash?
Hash typically refers to finely chopped potatoes. These potatoes may be used alone, fried or baked as hash browns. Or, they may be combined with a meat of choice and even vegetables to create a hash dish. Such a dish is a great way to use up leftovers!

Chinese Hash
1 lb. hamburger
1 c. onion, chopped
1 c. celery, chopped
1 can bean sprouts
1 can cream of chicken soup
1 can cream of mushroom soup
2 c. water
1/2 c. raw rice, uncooked
1/4 c. soy sauce
Chinese noodles
Mix all ingredients together except for Chinese noodles. Cook in saucepan for 30 minutes or until rice is soft. Pour into casserole dish and bake at 350 degrees for 10 minutes. Add Chinese noodles and bake another 10 minutes.

Texas Hash
1-1/2 pounds ground beef, fried with 2 cloves
chopped garlic, drained
2-16 oz cans Black-eyed Peas (one with
Jalapenos if you can find it)
2 Cups Rice, Cooked
1-1/2 Cup Shredded Cheddar Cheese
1/2 Cup Onion, diced
1-16 oz can Tomatoes, drained and chopped
1 Tbs. Butter, melted
Salt and Pepper to taste
Mix all ingredients together and place in a 13 x 9 baking dish. Bake in a 350 degree oven for 30 minutes or until bubbly. Will serve four hungry adults or six with lots of salad
and rolls.

Corned Beef Hash
3 cups cooked boiled potatoes, cubed
2 cups cooked chopped corned beef
1/2 cup finely chopped onion
about 1/2 cup milk
1/2 teaspoon salt
Dash of pepper
3 to 4 tablespoons butter or margarine
Combine potatoes, corned beef and onions; add enough of the milk to moisten and the salt and pepper. Melt butter in a skillet. Spread beef mixture evenly in pan and cook
over low heat about 20 minutes or until well browned on bottom. Turn in sections with spatula and brown other side. Or fold over as for omelet, if desired.
Makes 4 servings.

Pizza Hash From Wisconsin
1 can (1 pound) corned beef hash, chilled
1 cup (4 ounces) shredded American Cheese
1 (8 ounces) can tomato sauce
1/2 cup (3 ounce can) chopped mushroom, drained
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano, crushed
1 tablespoon grated parmesan cheese
Preheat oven to 375 degrees. Cut hash in 6 slices; arrange in 11x7x1 1/2" baking dish. Sprinkle American cheese over hash. Combine tomato sauce, mushrooms, garlic salt and oregano; spoon over hash. Sprinkle with parmesan cheese. Bake 20 minutes or until heated through. Great with a garden salad.
