Sweetheart Kiss Cookies and other Confectionary Delights

1/2 cup shortening
3/4 cup peanut butter
1/3 cup granulated sugar
1/3 cup light brown sugar, packed
1 egg
3 tbls. milk
1 tsp. vanilla extract
1-1/2 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
Granulated sugar
Hershey's Mini Kisses

Preheat oven to 360 degrees. In a large bowl, beat shortening and peanut butter with electric mixer until well mixed. Add granulated sugar and brown sugar; beat well. Add egg, milk and vanilla; beat until fluffy. Stir together in a separate bowl flour, baking soda and salt. Gradually add to peanut butter mixture, beating until blended. Shape into 1/2 inch balls. Roll balls in granulated sugar and place on ungreased cookie sheet.

Bake 5 to 6 minutes or until set. Immediately press Hershey's Mini Kisses into center of each cookie. Remove from cookie sheet to wire rack.

Bet you can't eat just one!



Cookies and Cream Cheesecake Bonbons

24 chocolate cream filled cookies, divided
1 pkg. (8 oz) cream cheese, softened
1 cup nonfat dry milk
1 tsp. vanilla
1 lb. powdered sugar

Coarsely chop 12 cookies, set aside. Place remaining 12 cookies in a food processor; process until fine crumbs form. Place crumbs on a cookie sheet lined with waxed paper; set aside.

Beat cream cheese, dry milk and vanilla in a medium bowl with electric mixer at medium speed until smooth. Beat in powdered sugar, 1 cup at a time at low speed until mixture is smooth. Stir in reserved chopped cookies. Refrigerate 2 hours or until firm.

Shape rounded tablespoonfuls cream cheese mixture into balls. Roll balls in reserved cookie crumbs. Sore in airtight container in refrigerator.

Makes about 3 dozen bonbons.

No-Cook Fondant

Makes about 80 centers.

1/2 cup butter, room temperature
2 pounds confectioners sugar
1 13 ounce can sweetened condensed milk
1 tsp. flavoring
1/4 tsp. salt
1 3/4 pounds chocolate for dipping

Combine butter, sugar and milk in large bowl. Add flavoring and salt. Gradually add remaining sugar, first with a spoon and then knead by hand. You may add food coloring at this point or coconut.

Form into small balls; let stand a few hours and dip in melted chocolate.

Sinful! Fudge Pudding Cake

Heat the over to 350 degrees

Mix together in a bowl:
3/4 cup sugar
1 cup flour
3 tablespoons of cocoa powder
1/4 tsp. salt
2 tsp. baking powder

Blend in :
1/2 cup of milk
1/3 cup of melted butter
2 tsp. of vanilla

Beat until smooth and then pour the batter into a 8x8 or 9x9 square pan.

In another bowl mix together:
1/2 cup sugar
1/2 cup dark brown sugar
4 tbs. of cocoa powder

Sprinkle this over the batter, then pour 1-1/4 cups of boiling water over the top of your creation...don't stir it! Bake for 35-40 minutes.

Serve with a spoonful of whipped cream garnished by peppermint leaves...get prepared for kisses!
