MixesDry mixes are an excellent way to save time. They are easy to prepare and store, and are on hand when you are in a crunch for mealtime ideas. Although commercially prepared mixes still may be easier you to pull from the cupboard, home prepared mixes can save money, and can be tailored to your own taste.

Once a mix is made, it can be used for a variety of recipes. For example, the All-Purpose mix can be used for biscuits, pancakes, bread and more. You only have to take the initial time to prepare the mix, store, and it's ready to use.

All-Purpose Mix

8-1/2 cups all-purpose flour.
4 tablespoons baking powder
1 teaspoon baking soda
1 tablespoon salt
2 teaspoons cream of tarter
1-1/2 cups instant non-fat dry milk
2-1/4 cups vegetable shortening

In a large bowl, sift all dry ingredients. Blend well. Cut in shortening until mixture resembles cornmeal in texture. Store in an airtight container, and label with date and contents. Mix should be discarded after 3 months.

Makes 12 to 13 cups.

Easy Muffins

2-1/2 All Purpose mix
4 tablespoons sugar
1 egg, beaten
1 cup milk or water

Preheat oven to 425F. Butter muffin pans. Combine All Purpose mix and sugar in a medium bowl. Mix well. In a separate bowl, combine egg and milk or water. Add to dry ingredients. Stir until just blended. Fill muffin pans 2/3 full. Bake 15 to 20 minutes until golden brown. Serve hot with butter and honey.

Variations:
Apple Muffins-Fold grated raw apple into muffin batter before putting into muffin pans and increase baking time to 20-25 minutes.

Cranberry Muffins-Fold 2/3 cup chopped cranberries into muffin batter before putting into muffin pans.

Easy Pancakes

2-1/4 cups All Purpose mix
1 teaspoon sugar
1 egg, beaten
1-1/2 cups milk or water

Combine All Purpose mix and sugar in a medium bowl. Mix well. In a separate bowl, combine egg and milk or water. Add to dry ingredients. Blend well. Let stand 5 to 10 minutes. Cook on hot, oiled griddle 3 to 4 minute until browned on both sides. Makes 10 to 12 4 inch pancake.

Serve with warmed maple syrup or fruit compote.

Italian Breadsticks

2 cups All Purpose mix
1/2 cornmeal or all-purpose flour
1/2 teaspoon salt
About 1/2 cup milk or water
Poppy seeds or garlic salt as garnish

Preheat oven to 400F. Lightly grease baking sheet. In a medium bowl, combine All Purpose mix, cornmeal or flour and salt. Add milk or water to form dough. Knead about 12 times, until dough is smooth. Divide into 12 balls of dough. Shape into pencil-like strands 1/2 thick. Roll in seeds, if desired or lightly sprinkle with garlic salt. Bake about 20 minutes, until brown and crisp. For extra crispiness, turn off oven and leave breadsticks in oven for an additional 5 to 10 minutes. Makes 12 breadsticks.

Impossible Pie

1/2 cup sugar
4 eggs
2 cups milk
1 teaspoon vanilla extract
3 tablespoons butter or margarine, melted
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup All Purpose mix

Preheat oven to 400F. Butter a 9" pie plate. In a blender, combine sugar, egg, milk, vanilla, melted butter or margarine, cinnamon and nutmeg. Blend until smooth. Add All Purpose mix and blend for 30 more seconds. Pour into prepared pie pan. Bake 25 to 30 minutes until golden.

Simple and Easy Biscuits

3 cups All Purpose mix
3/4 cup milk or water

Preheat oven to 400F. Grease a baking sheet. Combine All Purpose mix and milk or water in a medium bowl. Stir until just blended. Drop dough by tablespoons onto prepared baking sheet. Bake 10 to 12 minutes until golden brown. Makes 12 biscuits.

Variations:
Cheese and Herb Biscuits-Add 1/3 cup grated Cheddar cheese and chopped parsley, chives or herbs to taste while stirring dough.

Fruit Cobbler-Spoon dough over top of hot, sweetened fruit or berries and bake in an 8-inch square pan about 20 to 25 minutes until golden brown.
