More Quick Ideas For Blueberry Pies

Be creative and you may just be pleasantly surprised with yummy results!
· Bake frozen puff pastry shells and fill them with lightly sweetened blueberries. Crown with whirls of whipped cream or topping.
· Mix blueberries with sliced apples or peaches, and add sugar and spices to make a delicious two-fruit pie filling. Serve the pie on its own or a la mode.
· Fill baked tart or tartlet shells with prepared vanilla pudding, and decorate the tops with a layer of blueberries. (If you use frozen berries, thaw and drain them.)
Beyond Pies - Other Sweet Blueberry Treats
· Let fresh or frozen blueberries stand in a mixture of sugar and lemon or lime juice until they release some of their juice. Spoon the berries over pound cake, angel food cake or ice cream.
· Microwave frozen blueberries with a little of your favorite fruit jelly or jam to make a thick syrupy mixture. Top any cheesecake with the blueberry glaze.
· Arrange layers of sliced peaches, blueberries, plums and other summer fruit in a glass bowl. Sprinkle toasted coconut on top.
· Whirl frozen blueberries, banana chunks and orange juice in a blender to make a nutritious drink for breakfast or an afternoon pick-me-up. | |
