Apple Cornbread Stuffing

Ingredients:

2 cups apple cider
1/2 cup chopped celery
1 1/2 cups red apples chopped
2 cups bread cubes dried
2 cups cornbread crumbled
1/2-cup carrots shredded
1/2 cup green onions chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dried sage, or 2 tsp. fresh chopped

Place the cider and celery in a medium saucepan. Over medium heat, simmer mixture for 3 minutes. Remove from heat; stir in remaining ingredients, mixing until combined. Place in a 1 1/2 qt baking dish coated with cooking spray; cover. Bake at 350 degrees for about 45 minutes or until thoroughly heated. Makes 8 servings.
