Grilled Rueben Sandwich

1/3 c. mayonnaise
1 lb. sauerkraut
1 tbsp. ketchup
4 (4 oz.) slices Gruyere or other Swiss cheese
1 tbsp. fresh parsley, chopped
1/4 tsp. pepper
1 tbsp. horseradish
8 slices rye bread
2 tbsp. butter
3/4 1b. sliced corn beef

Combine the mayonnaise, ketchup, horseradish, parsley and pepper. Spread this sauce on bread. Layer the corned beef and sauerkraut on 4 slices of the bread, and top with the cheese. Cover with the remaining bread, and spread with I tablespoon butter. Melt the remaining 1 tablespoon butter in a large nonstick frying pan over medium heat. Add sandwiches, unbuttered side down, and fry until golden, about 5 minutes each side. Turn and brown the other side. ~ Carol
