what Jeremy Jackson has done. The results are an entertaining and recipe filled book
for those with a liking for "America's Unofficial Bread" - Cornbread.
Beginning with a bit of cornbread history, Jackson brings all that is "perfect" about cronbread
to the reader. He has gathered together a bountiful collection of cornbread
recipes that are sure to please from the traditional Sweet Cornbread to the "original"
Gospel Buns, Sweet Potato Cupcakes, and Honey Snail.
Jeremy Jackson has four goals:
Make cornbread one word. Once and for all.
Have cornbread named the official bread of the United States.
Find a wife.
Think outside the box of cornmeal about the Possibilities,
potentialities, and promises of cornbread.

Drop Biscuits The cornmeal flavor is featured front and center in these crusty biscuits.
Drop biscuits are so easy: no fussing with cutting in the shortening, no worries
about overhandling the batter. You can have these in the oven in three minutes.
Honestly. In fact, the batter will be ready beforeyour oven is heated to the
right temperature.
1/2 cup unbleached all-purposeflour
1/2 cup cornmeal
1/4 plus 1/8 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup buttermilk
3 tablespoons unsalted butter, softened
Preheat your oven to 400*F. Sift the dry ingredients together into a bowl, then
stir in the buttermilk and butter. Use a large spoon to plot the batter onto an
ungreased baking sheet. Make 8 to 12 biscuit-size plops.
Bake for 14 to 20 minutes, until lightly browned on the bottom. Serve hot.
Makes 8 to 12 biscuits.
