It seems that every year come September, my eyes are bigger than my kitchen. Let me explain...
Sometime about mid September we trek out on our first seasonal trip to the local apple orchard.
Once we enter the apple barn I am overcome with the wonderful aroma of fresh picked apples.
So, of course I cannot settle for a simple half bushel of these wonderful fruits but always
pick much more that we then lug to our vehicle.
As my kitchen counter becomes over run with apples the excitement begins...what shall I bake?
Apple Pies? Apple Cake? Apple Crumb Cake? These are all tasty recipes, but each year
I strive to add one more new apple recipe to our collection. This is not an easy task.
I truly believed that I had mastered all there was to make with apples. The Apple Barn Cookbook
proved me wrong.
With recipes such as Apple Nut Crunch, Apple-Cinnamon Puffs, Apple Cider Salad
and Sliced Apples In Wine I have found new ways to treat my family and
to use up all those apples!
Sample Recipe

Apple Brownies
2/3 cup soft margarine
1 3/4 cups brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup chopped walnuts
1 cup chopped, peeled apples
1/3 cup raisins
Powdered sugar
Cream margarine and brown suagr. Add eggs and beat until well mixed. Add vanilla and mix again. Add sifted dry ingredients and beat until mixture is smooth. Add apples, walnuts and raisins and stir gently with a strong spoon. Spread batter in a greased 9x13-inch pan and bake at 350 degrees for 30 to 35 minutes. Remove brownies from pan and roll each one in sifted powdered sugar.
