Think of Orlando and think of sunshine! A favorite vacation spot for many, Orlando is known for its fun and relaxed atmosphere. The Junior League of Greater Orlando has compiled a collection of regional cuisine sure to please beyond just a tourist's taste of sunsational Florida edibles.

Of course when one thinks of Florida, they can't help but also think citrus. Florida yields bumper orange crops. These crops were the basis for today's tourist trade for the greater Orlando region.

Sunsational Encore provides a plethora of citrus recipes along with good old southern dishes. Come taste the sunshine!

Sample Recipe

Spiced Oranges

2 Royal Oranges
1 lemon
2/3 cup water
1/4 cup sugar
1 cinnamonstick, broken into halves
4 wholecloves

Cut 2 long strips of peel from 1 orange and from the lemon. Remove and discard the remaining peel and pith from both oranges. Squeeze 1 tablespoon juice from the lemon; set aside. Cut the oranges crosswise into 1/2 inch slices. Arrange the slices in a shallow dish. Combine the water, sugar, cinnamon stick and cloves in a heavy saucepan. Bring to a boil over medium heat, stirring until the sugar dissolves. Simmer for 3 minutes. Add the reserved lemon juice, orange peel and lemon peel. Remove and discard the cinnamon stick and clove. Spoon the hot syrup over the orange slices. Chill, covered, until serving time, turning the slices occasionally.

Yield: 2 servings.
