When looking for a cookbook to review for PracticalKitchen.com, I very much try
to keep to those that allow for easy and quick recipes to follow. The title
of Hooffinfeathers: Easy Fool Proof Cooking was enough to lure me to take
a peek inside.
By beginning with The Fundamentals, author Chef Linda Wandensten sets up a
perfectly laid out cookbook for beginner cooks or for those more experienced
but still need a reminder now and again. Discussed are Standard Pan Capacities,
Substituting Equipment, A Few Basic Cooking Terms, and Cooking Techniques. The
book then continues onto its 150 contained recipes.
The recipes are organized by course from Appetizers through Desserts
with an easy read layout to follow. Each recipe not only lists the ingredients
and instructions but also a clock icon tells the cook how long it
will take to prepare. There are also untensil icons to quickly tell you which
you'll need for the recipe.
Don't forget to take a peek at the many helpful charts at the end of the book!

Roasted Red Bliss Potatoes
5 cups red bliss potatoes, quartered (do not peel)
1/4 cup olive oil
3/4 cup sliced onions
1 tablespoon rosemary
1 teaspoon pepper
1 tablespoon garlic
1 teaspoon oregano
Mix all the ingredients together. Place in a shallow-sided roasting pan. Roast
in a preheated 400-degree oven for 40 minutes, turning the potatoes every
15 minutes.
Variations:
Try this with sweet potatoes, or with a mixture of sweet and red
bliss potatoes.
Simply add 3/4 cup grated Parmesan cheese to the top of the red bliss
potatoes and roast as directed.
While there are many reasons for teaching kids to cook -- less expensive than eating out, preserves family heritage, etc, the most important
reason is that by teaching your child to cook, you're giving him a better chance to be a healthy grown-up. Enabling your child with the ability
to appreciate freshness and to transform ingredients into tasty foods opens their eyes to making wiser choices about what to eat...
