Reviewed by Cindy Sanchez

From the book jacket:
"Today's market shelves are lined with unique varieties of rice from all over the world. Join noted cookbook author and Bon Appétit columnist Marie Simmons on a journey through the amazing world of rice -- from learning how to select the right type of rice for every dish to the best ways to prepare each kind."

If you have ever wondered about the difference between long-grain and short-grain rice, or between brown, wild and white rice, this is the cookbook for you. Not only does Marie Simmons provide information on the various types of rice available, she also explains which type would best suit your dish needs.

The recipes are broken down into Soups, Salads, Little Dishes and Sides, Risotto, Pilaf, Paella, Other Main Courses, Rice Pudding and Sweet Endings. The recipes range in difficulty from the most experienced cook to the neophyte.

Whether you prefer cooking rice on the stove top or in a ricer, you'll find just what you looking for in The Amazing World of Rice: With 150 Recipes for Pilafs, Paellas, Puddings, and More !

Sample Recipe:

Simple Rice-Cooker Pilaf

2 tablespoons extra virgin olive oil
1/4 cup chopped onion
1 cup long-grain white rice
1/2 teaspoon minced garlic
1 3/4 cups reduced-sodium chicken broth
1 tablespoon finely chopped walnuts

Prehaet the rice cooker. Add the olive oil and onion to the rice cooker liner. Heat until sizzling; cook, stirring, until the onion is tender. Stir in the rice and garlic. Add the chicken broth; stir once to distribute the rice evenly.

Cover and start cooking. The bell will alert you when the liquid is absorbed. Sprinkle with walnuts and serve.

Serves 4.
